Balinese Lilit Satay Recipes


Here is the recipes  of the Balinese Lilit Satay which I have showed in the Practice exam of Hotel and Restaurant Industry. .... Enjoy Cooking... :)
 History of Balinese Lilit Satay
Lilit Satay is one of traditional Balinese food. This is a favorite food for Balinese people where this traditional food has great connection to the traditional ceremonies in Bali. The sate lilit is commonly made by sea fish but in the development some people had modified it with any meat like chiken or Pork. Lilit Satay commonly made in every traditional ceremonial in Bali like galungan, kuningan ngotonan, and many other Bali traditional ceremonial. Sate lilit is always connection to Bali religious ceremonial because there are great philosophies in side of the sate lilit where lilit came from the word “kilit” or “iket” in other “kilit” or “lilit” means string so the philosophies can be explained that the Balinese people expected can be in union for ever which can separated with any kind of challenger.
Ingredients

  1.  Mashed chicken meat, 250 gram
  2.  Whole white pepper, crushed coar
  3. Salt, ¾ teaspoon
  4. Sugar, ½ teaspoon
  5. Egg, 1
  6. Young coconut, ¼ parts from whole coconut (grated)
  7. Red hot chili pepper, 4 (sliced finely)
  8. Orange leaf, 3 (sliced thin)
  9. Lemon grass, 15 sticks (cleaned and then slice the edge of lemon grass)
  10. Tapioca flour, 1 tablespoon
  11. Coconut oil, 1 tablespoon (for greasing)

Mashed seasonings:
you  can  use chicken or fish meat

  • Red shallot, 6
  • Galirc, 2
  • Kencur (Kaempferia galanga L.), 1 cm
  • Ginger, 1 cm
  • Ginger plant, 1 cm
  • Roasted terasi (shrimp pasta), 1 teaspoon
  • Whole white pepper, ½ teaspoon
  • Coriander, ½ teaspoon
  •  Cumin, ½ teaspoon

The ways to make

  • Mix mashed chicken meat with mashed seasoning, white pepper, salt, sugar and egg.
  • Knead the dough until soft and united.
  •  Mix it with grated young coconut, red hot chili pepper, and orange leaf. Stir it back.
  • Prepare lemon grass and spread the hump of lemon grass with tapioca flour.
  •  Put 1 tablespoon of chicken dough and spread it. Shape it become round elongated like a pin.
  • Do this to all of lemon grass and chicken dough.
  •  Roast the sate lilit and turn it side by side until the color changing to be brown and cooked.
  • Spread it with little bit of coconut oil. Remove sate lilit from roaster.
  • Make up the sate lilit by cutting the edge of lemon grass.
  • Sate lilit is ready.
